Hello,

I need to use Matrix/Element however, i dont want to use the main matrix server ( matrix.org )… I search for some servers/instances, but i dont know which server to choose. I saw some ones that looks good in terms of privacy, like private.coffee ; rollenspiel.monster/ ; imagisphe.re/ ; nope.chat/ ; catgirl.cloud … …

anyone can advice a server or have an opinion about it?

servers.joinmatrix.org has a good list of public servers, and it links to their privacy policies and codes of conduct

I know the matrix.org servers are getting overloaded too.

One thing to be aware of if you want to avoid matrix.org is that Matrix communities can restrict federation with other servers.

In fact, the official Codeberg Matrix space has adopted this setting, and I ended up having to create an account on matrix.org again.
